Pulled Pork Tacos with Pineapple salsa & Cabbage Carrot Slaw


Tacos aren’t just for TUESDAYS! They are great every day.

Our kids love a traditional ground beef taco topped with cheese, tomatoes, lettuce, and salsa. But every once in awhile, we like to change things up!

My absolute favorite taco is a pulled pork taco, that combines the delicious flavours of pork shoulder, pineapple, and cabbage slaw. The avocado crema has a nice zip with the lime juice.

A great tip for pork shoulder – cook up the pork shoulder in the slow cooker and divide the meat into two bowls. One for tonight’s meal and one for a 2nd meal in a day or two.

Pulled Pork:

  • 2 to 3 lb boneless pork shoulder roast
  • 3 to 4 tbsp Lazuli Farms seasoning & rub (or salt & pepper)

Cut strings off pork shoulder roast & place in slow cooker. Cover & cook on low for 8 to 10 hours. Cooking low & slow will help make the pork tender and “shreddable”.

Once cooked, shred the pork with two forks or use a knife to cut into small pieces.

Pineapple Salsa:

  • 2 cups diced fresh pineapple
  • 1/2 red onion, diced
  • 2 tbsp freshly squeezed lime juice
  • salt & pepper to taste

Mix all ingredients in a small bowl and tuck in the fridge until ready to serve tacos.

Cabbage & carrot slaw:

  • 1/2 purple cabbage, sliced thinnly
  • 2 carrots, shredded (I use the small grater surface)
  • 2 jalapenos, diced (optional)
  • 2 tbsp freshly squeezed lime juice

Avocado Crema:

  • 1 avocado, mashed
  • 1/4 cup sour cream
  • 2 tbsp freshly squeezed lime juice
  • 1/2 tsp salt

Mash all ingredients together until smooth.


Place all ingredients on the table including: pork, pineapple salsa, cabbage slaw, avocado crema, freshly sliced jalapenos, sliced limes, and small flour or corn tortillas.

Top each tortilla with pork, salsa, slaw, avocado crema, and fresh jalapenos. Drizzle with fresh lime juice. And enjoy!
