This is my absolute favorite “meal in a bowl” meals!
Rice. Ground beef. Slivered peppers. Grated carrots. Green onions. Lettuce. Hard boiled eggs. Sesame seeds.
- 2 lbs ground beef, cooked
- 1/2 cup soy sauce
- 2 tbsp honey
- 1 tsp dried ginger
- 3 cloves garlic, minced or 2 tsp garlic powder
- 1/4 tsp crushed pepper flakes
- 3 cups basmati rice with 3 cups water
- 2 carrots, grated
- 3-4 green onions, minced
- 1 red pepper, sliced
- 4 leaves lettuce, sliced
- 4-6 hard boiled eggs, sliced
- 3 tbsp sesame seeds
Cook ground beef in a large skillet. While cooking, prepare rice, eggs, and toppings. Once beef is browned, add soy sauce, honey, ginger, pepper flakes, and garlic. Simmer for 3-5 minutes until thickened.
Tip: cook rice in your Instant Pot by adding rice & water and setting on high pressure cook for 1 minute. Yep, you read that right, 1 minute!
Tip: hard boil your eggs in the Instant Pot by adding 1 cup water to the bottom of the pot, adding as many eggs as you want, and setting it for 1 minute on high pressure cook. ONE minute! And the easiest eggs to peel. EVER!
Place all toppings in bowls to allow your guests to top their rice bowl to their liking! Enjoy!
